I’ve had a quick stab at showing how to configure a shader for use with RetroPie in case it helps anyone

It certainly makes the video look more retro on an HD TV.

If you use the newest RetroPie-Setup Script you can open RGUI with “F1” and select at runtime a new shader preset.

I’ve been playing around with that this week, although I think most (all) of those settings can be saved in the retroarch.cfg?
My approach is to get the best (in my view) shader for each system, and specify it in the system specific retroarch.cfg file – is that the right approach?

You are right. Shader names must be saved in the system specific retroarch.cfg. You can test, modify and save shader presets (*.glslp files) under RGUI.
