Fix your permissions error one of two ways:
1) You can change the owner of the file to pi.
sudo chown pi /etc/emulationstation/es_systems.cfg
2) Or you can put a file that overrides it in ~/.emulationstation
sudo cp /etc/emulationstation/es_systems.cfg ~/.emulationstation
vi ~/.emulationstation/es_systems.cfg
