Actually, this is on the to-do list for the RetroPie Setup Script for quite a while now, see https://github.com/retropie/RetroPie-Setup/issues/135. In general, it is possible to what you described!
I am sure that the people here would be glad if you would post any descriptions etc. when you were successful with that :-)
